Jasmine Tea Biscotti Recipe

Ingredients

1 teaspoon vanilla extract
3/4 cup granulated sugar
2 tablespoons jasmine tea leaves, finely ground
1/2 cup sliced almonds
1/2 cup unsalted butter, softened
Two large eggs
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt

Instructions

Preheat the oven to 350°F.
Using parchment paper, line a baking sheet.
Cream together the butter and sugar in a large mixing bowl until light and fluffy.
Incorporate the eggs and vanilla extract.
Separately, combine the flour, baking powder, salt, and ground jasmine tea leaves in a separate bowl.
Stir the dry ingredients into the wet ingredients until just combined.
Mix in the sliced almonds.
Divide the dough in half and shape each half into a 2-inch wide log on a baking sheet lined with parchment paper.
Bake for 25 minutes, or until the tops are lightly golden brown and firm to the touch.
Remove from oven and set aside for 5 minutes to cool on the baking sheet.
Cut each log diagonally into 1/2-inch thick slices with a serrated knife.
Place the slices on a baking sheet and bake for 10-12 minutes, flipping halfway through, until lightly golden brown and crisp.
Remove from the oven and set aside to cool completely before serving.
