Pistachio Biscotti Recipe
Pistachios add a nutty flavor to this classic biscotti recipe. This is ideal for dipping into your favourite hot beverage.
Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking powder
- 1/2 cup shelled pistachios, chopped
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon vanilla extract
- Two large eggs
Time Needed
- Prep Time: 20 minutes
- Cook Time: 40 minutes
- Total Time: 1 hour
Instructions
- Preheat the oven to 350°F.
- In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
- In a large mixing bowl, cream together the butter and sugar.
- Beat in the eggs and vanilla extract until smooth.
- Mix the dry ingredients into the wet ingredients until just combined.
- Mix in the pistachios.
- Divide the dough in half and shape each half into a log about 2 inches in diameter and 12 inches long on a floured surface.
- Bake the logs for 25 minutes, or until lightly golden brown, on a baking sheet lined with parchment paper.
- Remove the logs from the oven and set aside for 10 minutes to cool.
- Cut logs diagonally into 1/2-inch slices with a sharp serrated knife.
- Place the slices on a baking sheet and bake for another 10-15 minutes, or until the cookies are lightly golden brown and crisp.
- Remove from the oven and set aside to cool before serving.
