Pistachio Biscotti Recipe

Pistachios add a nutty flavor to this classic biscotti recipe. This is ideal for dipping into your favourite hot beverage.

  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour

Instructions

  • Preheat the oven to 350°F.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda and salt.
  • In a large mixing bowl, cream together the butter and sugar.
  • Beat in the eggs and vanilla extract until smooth.
  • Mix the dry ingredients into the wet ingredients until just combined.
  • Mix in the pistachios.
  • Divide the dough in half and shape each half into a log about 2 inches in diameter and 12 inches long on a floured surface.
  • Bake the logs for 25 minutes, or until lightly golden brown, on a baking sheet lined with parchment paper.
  • Remove the logs from the oven and set aside for 10 minutes to cool.
  • Cut logs diagonally into 1/2-inch slices with a sharp serrated knife.
  • Place the slices on a baking sheet and bake for another 10-15 minutes, or until the cookies are lightly golden brown and crisp.
  • Remove from the oven and set aside to cool before serving.
