Made from Scratch Gingerbread Cookies Recipe

These homemade gingerbread cookies are ideal for the holidays or whenever you want a spicy-sweet treat. They're soft and chewy, with warm spices like ginger, cinnamon, and cloves. They're also simple to make from scratch.

Ingredients

  • Prep Time: 30 minutes
  • Cook Time: 10 minutes
  • Total Time: 40 minutes

Instructions

  • Whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves in a medium mixing bowl.
  • In a large mixing bowl, cream together the butter, brown sugar, and egg with an electric mixer on medium speed until well combined.
  • Mix in the molasses and vanilla extract until well combined.
  • Add the dry ingredients to the wet ingredients in a slow, steady stream until just combined.
  • Cut the dough in half and form each half into a disc.
  • Refrigerate the discs for at least 2 hours, wrapped in plastic wrap.
  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Roll out the dough to a 1/4-inch thickness on a lightly floured surface.
  • Cut out desired shapes with cookie cutters and place them 1 inch apart on prepared baking sheets.
  • 8 to 10 minutes, or until the edges are firm and the centres are soft and puffy.
  • Cool cookies for 5 minutes on the baking sheets before transferring to wire racks to cool completely.
