Vegan Gingerbread Cookies Recipe

These vegan gingerbread cookies are the perfect holiday treat. They're soft and chewy, with just a hint of spice.

Ingredients

  • Prep Time: 20 minutes
  • Cook Time: 10 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cream the vegan butter and brown sugar together in a large mixing bowl until smooth.
  • Incorporate the molasses and applesauce.
  • Combine the flour, baking soda, salt, ginger, cinnamon and cloves in a separate bowl.
  • Mix the dry ingredients into the wet ingredients until thoroughly combined.
  • Wrap the dough in plastic wrap and divide it in half.
  • Chill for at least 2 hours in the refrigerator.
  • Roll out the dough to about 1/4-inch thickness on a floured surface.
  • Cut out shapes with cookie cutters and place on a baking sheet lined with parchment paper.
  • 8–10 minutes, or until the edges are lightly browned.
  • Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
