Star Anise Oatmeal Cookies Recipe
These oatmeal cookies have a fragrant star anise flavour that adds a unique and delicious twist. They're ideal for a snack or dessert and will impress your friends and family.
Ingredients
- 1 1/2 cups rolled oats (old-fashioned)
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon ground star anise
- 1 egg
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, room temp
- 1 teaspoon baking powder

- Prep Time: 15 minutes
- Cook Time: 15 minutes
- Total Time: 30 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt and ground star anise in a medium mixing bowl.
- In a large mixing bowl, cream together the butter and both sugars until light and fluffy.
- Incorporate the egg and vanilla extract.
- Mix in the flour mixture until it is just combined with the butter mixture.
- Incorporate the rolled oats.
- Drop rounded tablespoons of dough onto the prepared baking sheet with a cookie scoop or spoon.
- Bake for 12-15 minutes, or until golden brown around the edges.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
