Ginger Cut-Out Cookies Recipe

These Ginger Cut-Out Cookies are ideal for the holidays or any other special occasion. They're soft and chewy, with just the right amount of spice. They're also enjoyable to decorate.

  • Prep Time: 30 minutes
  • Cook Time: 12 minutes
  • Total Time: 42 minutes

Instructions

  • In a mixing bowl, combine the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves.
  • In a large mixing bowl, cream together the butter and brown sugar on medium-high speed for 3 minutes, or until pale and fluffy.
  • Beat in the egg and molasses until well combined.
  • Mix in the flour mixture until just combined.
  • Cut the dough in half and shape each half into a disc.
  • Wrap the discs in plastic wrap and chill for at least 2 hours.
  • Preheat the oven to 375°F with the rack in the centre.
  • Roll out 1 disc of dough to 1/8 inch thick on a lightly floured surface with a floured rolling pin (remaining dough should be chilled).
  • Cut out as many cookies as possible with cookie cutters and place them on two ungreased large baking sheets, spacing them about 1 inch apart.
  • Bake cookies, one sheet at a time, for 10 to 12 minutes, or until the edges are slightly darker.
  • Cool cookies on sheets for 1 minute before transferring to racks to cool completely.
