Instructions

  • Preheat the oven to 350°F.
  • Cream the butter and brown sugar together in a mixing bowl until light and fluffy.
  • Incorporate the molasses and egg.
  • Whisk together the flour, ginger, cinnamon, cloves, salt and baking soda in a separate bowl.
  • Add the dry ingredients to the wet mixture gradually, mixing until just combined.
  • Form the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  • Bake for 10-12 minutes, or until the edges are firm but the centres are still soft.
  • Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
