Gingerbread Cookies with Frosting Recipe
These gingerbread cookies are a traditional Christmas treat. Warm spices and molasses add a rich, comforting flavour that's ideal for sharing with family and friends. The frosting adds a sweet finishing touch that will not disappoint.
Ingredients
- 1/2 tsp vanilla extract
- 1 teaspoon vanilla extract
- 1/4 tsp ground nutmeg
- 2 1/4 cups all-purpose flour
- 1-2 tbsp milk
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/4 tsp salt
- 1 teaspoon cinnamon (ground)
- 1/4 tsp baking soda
- 1/2 cup molasses
- 1/4 tsp ground cloves
- 1/2 cup granulated sugar
- 2 tsp ground ginger
Time Needed
- Prep Time: 20 minutes
- Cook Time: 12 minutes
- Total Time: 32 minutes
Instructions
- Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves and nutmeg in a medium mixing bowl.
- In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
- Beat in the molasses, egg, and vanilla extract until well combined.
- Add the flour mixture to the butter mixture gradually, mixing until just combined.
- Roll the dough into small balls and place them 2 inches apart on the prepared baking sheet.
- Bake for 10 to 12 minutes, or until the edges are golden brown.
- Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
- To make the frosting, whisk together the powdered sugar, vanilla extract, and just enough milk to make it smooth and spreadable.
- Spread the frosting over the cooled cookies and set aside for 15 minutes before serving.
