Gingerbread Cookies with Frosting Recipe

These gingerbread cookies are a traditional Christmas treat. Warm spices and molasses add a rich, comforting flavour that's ideal for sharing with family and friends. The frosting adds a sweet finishing touch that will not disappoint.

  • Cook Time: 12 minutes
  • Total Time: 32 minutes

Instructions

  • Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
  • Whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves and nutmeg in a medium mixing bowl.
  • In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
  • Beat in the molasses, egg, and vanilla extract until well combined.
  • Add the flour mixture to the butter mixture gradually, mixing until just combined.
  • Roll the dough into small balls and place them 2 inches apart on the prepared baking sheet.
  • Bake for 10 to 12 minutes, or until the edges are golden brown.
  • Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
  • To make the frosting, whisk together the powdered sugar, vanilla extract, and just enough milk to make it smooth and spreadable.
  • Spread the frosting over the cooled cookies and set aside for 15 minutes before serving.
