Instructions

  • Preheat the oven to 350°F (175°C).
  • Cream the butter and brown sugar together in a large mixing bowl until light and fluffy.
  • Mix in the molasses and egg thoroughly.
  • Whisk together the flour, ginger, cinnamon, nutmeg, salt and baking soda in a separate bowl.
  • Stir the dry ingredients into the wet mixture gradually until a dough forms.
  • Roll the dough into small balls and coat with granulated sugar.
  • Place the dough balls 2 inches apart on a baking sheet lined with parchment paper.
  • Bake for 10 to 12 minutes, or until the edges are firm and the centres are soft.
  • Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
