Homemade Biscuit Cookies Recipe

These homemade biscuit cookies are quick and easy to make. They're ideal for snacking or serving at a party.

Preheat the oven to 350°F (175°C).
Whisk together the flour, sugar, and salt in a large mixing bowl.
Mix in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Whisk together the egg yolk, cold water, and vanilla extract in a separate bowl.
Stir the egg mixture into the flour mixture until just combined.
Wrap the dough in plastic wrap and form it into a disc.
Chill for at least 30 minutes in the refrigerator.
Roll out the chilled dough to 1/4 inch thickness on a floured surface.
Cut out shapes from the dough with cookie cutters and place them on a baking sheet lined with parchment paper.
12-15 minutes, or until the edges are lightly golden.
Remove from the oven and cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
