Instructions

  • Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Whisk together the flour, baking powder, and salt in a separate bowl.
  • Add the dry ingredients to the wet mixture gradually, mixing until just combined.
  • Divide the dough into two parts and roll each into a 2-inch-diameter log.
  • Wrap each log tightly in plastic wrap and place in the refrigerator for at least an hour.
  • Preheat the oven to 350°F/175°C and line a baking sheet with parchment paper.
  • Remove the dough from the refrigerator and cut it into 1/4-inch thick rounds.
  • Place the cookies on the prepared baking sheet, spacing them about 1 inch apart.
  • Preheat the oven to 12-15 minutes, or until the edges are lightly golden.
  • Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
