Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
Cream the butter and sugar together in a large mixing bowl until light and fluffy.
Mix in the egg and vanilla extract until thoroughly combined.
Whisk together the flour, baking powder, and salt in a separate bowl.
Stir the dry ingredients into the wet ingredients until just combined.
Fold the cherry jam into the dough until it is evenly distributed.
Scoop the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.
Preheat the oven to 12-15 minutes, or until the edges are golden brown and the centres are set.
Remove the cookies from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
