Sugar Cookies with Cherries Recipe

Ingredients

3/4 cup unsalted butter, room temp
1 cup granulated sugar
1/2 teaspoon baking powder
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup dried cherries, chopped

Instructions

In a medium mixing bowl, combine the flour, baking powder, and salt.
In a large mixing bowl, cream together the butter and sugar until smooth.
Beat in the egg and vanilla extract until smooth.
Add the flour mixture to the butter mixture gradually, beating until just combined.
Add the chopped cherries and mix well.
Divide the dough in half and shape each half into a 2-inch-wide log.
Refrigerate the logs for at least 2 hours, or until firm, wrapped in plastic wrap.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Using parchment paper, line a baking sheet.
Cut the logs into 1/4-inch thick rounds and arrange them on the prepared baking sheet, about 1 inch apart.
Bake for 12 to 15 minutes, or until the edges of the cookies are lightly golden brown.
Allow the cookies to cool completely on a wire rack.
