Instructions

  • Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
  • Cream the butter and sugar together in a mixing bowl until light and fluffy.
  • Mix in the vanilla extract and salt until well combined.
  • Incorporate the flour until just combined and a dough forms.
  • Roll the dough into 1-inch balls and place them on the baking sheet that has been prepared.
  • Make an indentation in the centre of each cookie with your thumb.
  • Raspberry jam should be placed in each indentation.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
  • Before serving, dust with powdered sugar.
