Instructions

  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  • Mix in the egg and vanilla extract until well combined.
  • Whisk together the flour, baking powder, and salt in a separate bowl.
  • Add the flour mixture to the butter mixture gradually, mixing until just combined.
  • Roll the dough into small balls and place them on the baking sheet that has been prepared.
  • Make a small indentation in the centre of each cookie with your thumb or the end of a wooden spoon.
  • Fill each indentation with approximately 1/2 teaspoon jam.
  • Cook for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
