Instructions

  • Preheat the oven to 350°F (180°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Separately, whisk together the flour, baking powder, and salt.
  • Add dry ingredients to butter mixture in a slow, steady stream until just combined.
  • Roll the dough into 1-inch balls and place them on prepared baking sheets 2 inches apart.
  • Make a small indentation in the centre of each ball with your thumb.
  • Place a teaspoon of raspberry jam in each indentation.
  • Bake for 12-15 minutes, or until the edges are golden.
  • Cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
