Raspberry Jam Sugar Cookies are the ideal balance of sweet and tangy. The buttery, soft sugar cookies are filled with a delicious raspberry jam centre that surprises you with every bite.
Ingredients
- 1/2 cup raspberry jam
- Two large eggs
- 1 teaspoon vanilla extract
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 tsp salt
- 3 cups all-purpose flour
Time Needed
- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
Instructions
- Preheat the oven to 350°F (180°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Separately, whisk together the flour, baking powder, and salt.
- Add dry ingredients to butter mixture in a slow, steady stream until just combined.
- Roll the dough into 1-inch balls and place them on prepared baking sheets 2 inches apart.
- Make a small indentation in the centre of each ball with your thumb.
- Place a teaspoon of raspberry jam in each indentation.
- Bake for 12-15 minutes, or until the edges are golden.
- Cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
