  • Mix in the egg and vanilla extract until thoroughly combined.
  • Whisk together the flour, baking powder, baking soda and salt in a separate mixing bowl.
  • Slowly incorporate the dry ingredients into the wet ingredients, mixing only until combined.
  • Fold the rolled oats into the dough until they are evenly distributed.
  • Portion the dough into 1 1/2-inch balls with a cookie scoop or spoon and place them on the prepared baking sheet.
  • Bake for 10 to 12 minutes, or until the edges are golden.
  • Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
