  • Cook Time: 12 minutes
  • Total Time: 32 minutes

Instructions

  • Preheat the oven to 350°F (175°C).
  • Using parchment paper, line a baking sheet.
  • Cream together peanut butter, butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
  • Mix in the egg and vanilla extract until well combined.
  • Separately, whisk together the flour, baking powder, baking soda and salt.
  • Mix dry ingredients into wet ingredients gradually until just combined.
  • Stir in the chocolate chips.
  • Drop dough onto prepared baking sheet with a cookie scoop and gently flatten each cookie with a fork.
  • 10-12 minutes, or until the edges are lightly browned.
  • Remove from oven and place on a wire rack to cool.
  • Heat heavy cream in a microwave-safe bowl until hot but not boiling.
  • Stir in the chocolate chips until smooth and melted.
  • Dip each cookie into the chocolate mixture and place on a baking sheet lined with parchment paper.
  • Allow the chocolate to harden at room temperature before serving.
