The perfect summer treat are these Chocolate Chip Cookie Ice Cream Sandwiches. A delicious and refreshing dessert made of soft and chewy chocolate chip cookies filled with creamy vanilla ice cream.

Ingredients

1/2 cup white sugar
1/2 cup unsalted butter, softened
1 1/2 cups all-purpose flour
1 cup semisweet chocolate chips
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp baking soda
1 egg
1 pint vanilla ice cream
1 teaspoon vanilla extract

Total Time: 32 minutes

Instructions

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Cream together the butter, white sugar, and brown sugar in a large mixing bowl until light and fluffy.
Incorporate the egg and vanilla extract.
Combine the flour, baking soda and salt in a separate bowl.
Add the dry ingredients to the butter mixture in a slow, steady stream until just combined.
Add the chocolate chips and mix well.
Spoon the cookie dough onto a parchment-lined baking sheet, leaving 2 inches between each cookie.
Bake for 10-12 minutes, or until golden brown around the edges.
Allow the cookies to completely cool.
Scoop a generous amount of vanilla ice cream onto the bottom side of a cookie with a cookie scoop or spoon.
Place another cookie on top of the ice cream and press down gently to form a sandwich.
Continue with the remaining cookies and ice cream.
Wrap each sandwich individually in plastic wrap and place in the freezer for at least 2 hours before serving.
