Chocolate Chip Ice Cream Sandwich Recipe
Chewy chocolate chip cookies and creamy vanilla ice cream are used to make these homemade ice cream sandwiches. They're the ideal summer treat.
Ingredients
- 1 pint vanilla ice cream
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 cup semisweet chocolate chips
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1/2 tsp salt
- 1 1/2 cups all-purpose flour
Time Needed
- Prep Time: 20 minutes
- Cook Time: 12 minutes
- Total Time: 32 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Cream together the butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Incorporate the egg and vanilla extract.
- Whisk together the flour, baking soda and salt in a separate bowl.
- Add the flour mixture to the butter mixture gradually, mixing until just combined.
- Add the chocolate chips and mix well.
- Spoon the cookie dough onto a baking sheet lined with parchment paper, forming 16 cookies.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Allow to cool completely after removing from the oven.
- Remove the vanilla ice cream from the freezer and set it aside for 5-10 minutes to soften.
- To make sandwiches, scoop 1/4 cup of ice cream onto the flat side of 8 cookies, then top with the remaining cookies.
- Wrap each sandwich individually in plastic wrap and place in the freezer for at least 2 hours before serving.
