Chewy chocolate chip cookies and creamy vanilla ice cream are used to make these homemade ice cream sandwiches. They're the ideal summer treat.

Preheat the oven to 350 degrees Fahrenheit.
Cream together the butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
Incorporate the egg and vanilla extract.
Whisk together the flour, baking soda and salt in a separate bowl.
Add the flour mixture to the butter mixture gradually, mixing until just combined.
Add the chocolate chips and mix well.
Spoon the cookie dough onto a baking sheet lined with parchment paper, forming 16 cookies.
Bake for 10-12 minutes, or until the edges are lightly golden brown.
Allow to cool completely after removing from the oven.
Remove the vanilla ice cream from the freezer and set it aside for 5-10 minutes to soften.
To make sandwiches, scoop 1/4 cup of ice cream onto the flat side of 8 cookies, then top with the remaining cookies.
Wrap each sandwich individually in plastic wrap and place in the freezer for at least 2 hours before serving.
