Vanilla Sandwich Cookies Recipe

These buttery vanilla sandwich cookies are a classic treat fit for any occasion. The soft and crumbly cookies are filled with creamy vanilla frosting, creating a delectable and filling snack.

Ingredients

1 cup (2 sticks) unsalted butter, room temp
1/2 teaspoon salt
2 cups all-purpose flour
2 teaspoons vanilla extract
1/2 cup vanilla frosting
1/2 cup granulated sugar

Cook Time: 15 minutes
Total Time: 45 minutes

Instructions

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Cream the butter and sugar together in a large mixing bowl until light and fluffy.
Incorporate the vanilla extract.
In a separate bowl, combine the flour and salt.
Add the flour mixture to the butter mixture gradually, stirring until well combined.
Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
Flatten each ball slightly with a fork and make a crisscross pattern on top.
Preheat the oven to 12-15 minutes, or until the edges are lightly golden.
Allow the cookies to finish cooling on the baking sheet.
To make a sandwich, spread a dollop of vanilla frosting on the bottom of one cookie and top with another.
Rep with the rest of the cookies and frosting.
