Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Cream the butter, sugar, salt, and vanilla extract in a mixing bowl until light and fluffy.
  • Mix in the flour until just combined.
  • Roll the dough into 1-inch balls and space them 2 inches apart on a baking sheet lined with parchment paper.
  • Make an indentation in the centre of each ball with your thumb or the end of a wooden spoon.
  • Fill each indentation with a small amount of apricot preserves.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
