Instructions

  • Cream the butter and powdered sugar together in a large mixing bowl until light and fluffy.
  • Incorporate the vanilla extract.
  • Mix in the flour gradually until just combined.
  • Fold in the pistachios, if using.
  • Wrap the dough in plastic wrap after shaping it into a ball.
  • Chill for at least 30 minutes in the refrigerator.
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • Roll out the chilled dough to a thickness of 1/4-inch and cut out the cookies with a cookie cutter.
  • Bake the cookies for 12-15 minutes, or until the edges are lightly golden, on the prepared baking sheet.
  • Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
