Instructions

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Combine the almond butter, coconut sugar, egg, vanilla extract, baking soda and salt in a mixing bowl.
  • Mix until all of the ingredients are well combined.
  • If using, fold in the dark chocolate chips.
  • Place the dough in small balls on a baking sheet lined with parchment paper.
  • To make a criss-cross pattern, press down on the balls with a fork.
  • Bake for 10-12 minutes, or until golden brown around the edges.
  • Remove from the oven and cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
