Instructions
- Cream the butter and sugar together in a large mixing bowl until light and fluffy.
- Incorporate the eggs and vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Add the flour mixture to the butter mixture gradually, mixing until just combined.
- Make two equal portions of dough and shape each into a flat disc.
- Refrigerate for at least 30 minutes after wrapping in plastic wrap.
- Preheat the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- Roll out one disc of dough to 1/4 inch thickness on a floured surface.
- Cut out desired shapes with cookie cutters and place on prepared baking sheets.
- Bake for 10 to 12 minutes, or until the edges are golden brown.
- Cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
- Repeat with the rest of the dough.
- Store at room temperature in an airtight container for up to 1 week.
