Instructions

  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • In a medium mixing bowl, combine the flour, baking soda and salt.
  • In a separate large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.
  • Mix in the egg and vanilla extract until thoroughly combined.
  • Mix in the dry ingredients slowly until just combined.
  • Combine the rolled oats and dark chocolate chips in a mixing bowl.
  • Drop the dough onto the prepared baking sheet, about 2 inches apart, with a cookie scoop or spoon.
  • Bake for 10 to 12 minutes, or until the edges are golden brown and the centres are set.
  • Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
