- Combine the oats, flour, baking soda and salt in a mixing bowl.
- In a separate mixing bowl, cream together the butter, brown sugar, and granulated sugar.
- To the butter mixture, add the egg and vanilla extract and beat until smooth.
- Add the dry ingredients to the wet mixture gradually, mixing until well combined.
- Incorporate the dried cranberries.
- Drop rounded spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges begin to brown.
- Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
