Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon baking powder
- 3 cups rolled oats (old-fashioned)
- Two large eggs
- 2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, room temp
- 1 teaspoon baking soda

- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Cream together the butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- Whisk together the flour, baking powder, baking soda and salt in a separate mixing bowl.
- Add the dry ingredients to the butter mixture gradually, mixing until just combined.
- Incorporate the rolled oats.
- Drop the dough onto a baking sheet lined with parchment paper with a cookie scoop.
- Preheat the oven to 12-15 minutes, or until the edges are lightly browned.
- Remove the cookies from the oven and set aside for a few minutes before transferring them to a wire rack to cool completely.
