Soft Chewy Oatmeal Cookies Recipe
These soft, chewy oatmeal cookies are ideal for any occasion. They'll become a family favourite because they're packed with hearty oats and a hint of sweetness.
Ingredients
- 1/2 cup white sugar
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 3 cups rolled oats (old-fashioned)
- 1 teaspoon baking soda
- Two large eggs
- 1 cup unsalted butter, softened

- Prep Time: 20 minutes
- Cook Time: 12 minutes
- Total Time: 32 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Cream together the butter, brown sugar, and white sugar in a large mixing bowl until light and fluffy.
- One at a time, beat in the eggs, then stir in the vanilla extract.
- Whisk together the flour, baking soda and salt in a separate bowl.
- Stir the dry ingredients into the butter mixture until just combined.
- Incorporate the oats.
- Place rounded tablespoons of dough on ungreased baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the top is lightly golden brown.
- Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
