These chocolate chip sandwiches are a decadent and delicious treat that are ideal for any occasion. The cookies are soft and chewy, with a light and airy texture that pairs well with the rich chocolate chips.

  • Total Time: 42 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar for 3-4 minutes, or until light and fluffy.
  • Mix in the egg and vanilla extract until well combined.
  • Whisk together the flour, baking soda and salt in a separate bowl.
  • Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
  • Add the chocolate chips and mix well.
  • Make small balls of the dough and place them on a baking sheet lined with parchment paper.
  • Bake for 10 to 12 minutes, or until the edges are golden brown.
  • Remove the cookies from the oven and place them on a wire rack to cool completely.
  • In a medium mixing bowl, whisk together the heavy whipping cream and powdered sugar until stiff peaks form.
  • To make the sandwiches, take one cookie and spread it with whipped cream.
  • Top with another cookie, gently pressing down to form a sandwich.
  • Rep with the rest of the cookies and whipped cream.
  • Serve immediately or refrigerate in an airtight container for up to 2 days.
