- In a separate mixing bowl, combine the flour, cocoa powder, baking soda and salt.
- Add the dry ingredients to the butter mixture in a slow, steady stream until just combined.
- Incorporate the chocolate chips.
- In a separate bowl, combine the cream cheese and powdered sugar until smooth.
- Scoop tablespoon-sized cookie dough balls onto a parchment-lined baking sheet.
- Make an indentation in the centre of each dough ball with your thumb.
- Place a small spoonful of the cream cheese mixture in each indentation.
- Another tablespoon of cookie dough should be used to cover the cream cheese filling, pressing the edges together to seal the filling inside.
- Chill the dough balls for at least 30 minutes in the refrigerator.
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Bake for 12-15 minutes, or until the edges are firm and the centres are slightly soft.
- Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
