Ginger Oatmeal Cookies Recipe
These ginger oatmeal cookies are a tasty twist on a traditional favourite. The crystallised ginger adds a spicy kick that complements the chewy muesli texture perfectly.
Ingredients
- 1/2 cup unsalted butter, room temp
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 1/2 tsp baking soda
- 1/2 cup crystallised ginger, chopped
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1 1/2 cups old-fashioned oats
- 1/2 tsp ground cinnamon
- 1/2 cup brown sugar
- 1/2 tsp ground ginger

- Cook Time: 15 minutes
- Total Time: 35 minutes
Instructions
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- In a medium mixing bowl, combine the flour, baking soda, cinnamon, ginger and salt.
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- Mix in the flour mixture just until combined.
- Fold in the oats and ginger crystals.
- Spoon the dough into spoonfuls onto a baking sheet lined with parchment paper.
- Preheat the oven to 12-15 minutes, or until the edges are lightly browned.
- Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
